It's maple syrup season here in New York State, so I had to share this fantastic-looking quick bread recipe from the New York State Maple Syrup Producers' Association. It's made with some whole wheat flour and doesn't contain any oil or butter, so it's very healthy! I plan to try it soon!
- 1 cup shredded dates
- 3⁄4 teaspoon baking soda
- 1 cup boiling water
- 1 egg, beaten
- 1⁄2 cup maple syrup
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1⁄2 cup chopped nuts
- Preheat oven to 350 degrees F.
- Mix together the dates, baking soda, and boiling water.
- Add the egg and syrup and mix well.
- Beat in remaining ingredients.
- Pour into a greased 9x5-inch bread pan and bake for one hour or until done.
Very tasty. I enjoyed the flavor of this date & nut filled bread and liked the hint of maple flavor the syrup provides. It baked up very well and exactly on time. I use chopped dates. I did have one problem with the instructions - after adding the boiling hot water to the dates & baking soda,the next step is to add the egg - which would certainly have started to cook the minute it hit the boiling water. I instead waited 15 minutes for the boiling water to cool to room temperature, then mixed the egg with the maple syrup and added a spoonful of the now tepid date mixture into the egg mixture to temper it, then poured the whole egg mixture into the date mixture, stirring constantly. This worked well and the loaf came out lovely and tasty. For taste this would be a 5 stars.
