Wine Butter Sauce

I've been making this recipe for years. It's wonderful with any seafood. Incredible with steamed clams. It's the basic buerre blanc sauce with no need to add any other seasonings. Some recipes are better left alone. This is one of them. Thanks for posting.

  1. combine 1st 3 ingredients in a small saucepan. Simmer 4 to 5 minutes until mixture is reduced to a glaze.
  2. Stir in cream and reduce again to a glaze.
  3. Remove from heat and let cool 2 minutes.
  4. Add chilled butter cubes and gently stir with a wire whisk until incorporated.
  5. Season with white pepper and salt to taste.
