Budget Stretcher Beef and Potato Casserole

This is a fast to fix main dish. I make this when I'm not in the mood to cook and it is budget friendly.

Ingredients Nutrition

  • 4 medium potatoes
  • 1 lb ground beef, cooked and drained
  • 1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
  • 1 (10 3/4 ounce) can condensed vegetable beef soup, undiluted
  • 12 teaspoon salt


  1. In a large bowl, combine all ingredients.
  2. Transfer to a greased 2 quart baking dish.
  3. Cover and bake at 350 degrees for 1 1/2 hours or until potatoes are tender.

This was very good! I wanted something different for supper so I thought I would give it a try. I followed the advice of some of the other reviewers. I cubed the potatoes and mixed them right in with the beef and soup mixture. I also added onion and a dash of worshteshire (sp?) sauce to the hamburger while it was cooking. I placed some cheese on top and topped it off with buscuits in the last 10 minutes of cooking. YUMMY!

My family and myself eat this at least three times a month, it's DHs favourite and I love cooking it!! So easy!! I have made a few changes though: I also chop up an onion into it, add a bit of black pepper, crumble a beef stock cube.. and after cooking covered, I uncover it and brown some cheese on top. Delicious!

I was EXTREMELY skeptical of the idea of mixing cream of chicken soup with the vegetable beef soup - HOWEVER, this was great! It reminds me of a pot roast dinner! My kids and husband all loved it, and DH took it for lunch the next day, and said it was as good as the night before. We'll definitely be making this again. I used red potatoes, cutting them up fairly small for faster cooking time. I also cooked 1/2 an onion with the ground beef and a pinch of minced garlic (we're garlic lovers). This was great - we'll definitely be making again - especially on those crazy ballpark nights!
