Buckwheat Pancakes for a Bunch

"This is a favorite at our monthly parish breakfast. In the fall, I substitute 1/2 gal. of milk with 1/2 gal. of Apple Cider for a special treat."

  • 1. Mix dry ingredients (first 5) together.
  • 2. Mix wet ingredients together.
  • 3. Mix wet mixture into dry mixture -- mix thouroughly.
  • Preheat griddle at medium heat setting.
  • Ladle 1/2 to 2/3 cup per pancake onto lightly oiled griddle.
  • Cook for about 2 minutes per side.
  • These pancakes need to cook slower than normal pancakes or they will get too dark. Serve with berries, syrup or apple sauce.Enjoy!
