This is a quick and easy recipe that I always make whenever I have leftover chicken from my chicken soup (see my recipe). You may use low-fat mayonaisse, but I prefer regular mayo for this recipe.
- 3 cups cubed chicken
- 3 stalks celery, sliced
- 1 can pineapple chunk, drained
- salt and pepper
- Mix chicken, celery, pineapple, mayonaisse, salt and pepper in large bowl until thoroughly combined.
- Chill and serve.
