Whats not to love when bacon is involved...I didn't core the little things...too hard...so after blanching and dunking in cold water...I just cut off the ends and removed the leaves...next time I will increase the thyme or add a bit of dried thyme to get more of the herb flavor...I would also omit the salt because the bacon was salty enough for me...very tasty and delicious...thanks for posting it...=)
