So good! As with other reviewers, I used the jarred peppers, but will most definitely try this with fresh roasted next time. I also used fresh parsley along with fresh basil and I had to reduce the garlic to 1 clove, as my husband was heading off to work the day I made this. Will add the full amount next time nobody is heading out the door. LoL! Made for Everyday Holiday Tag. :)

made it with jarred marco polo long red peppers. Fantastic! Thanks for a quick and easy and tasty recipe! I put it together in under 5 minutes!!

Wonderful bruschetta recipe Nimz! I did use red peppers from a jar and they worked great. Didnt seed the tomatoes, just chopped very small. Used 1/2 teaspoon of salt for us, the parmesan cheese adds a salty flavor. Wish I could give this more than 5 stars! Thank you hon!

In a bid to be a little harder in my rating system, I STILL had to give this 5 stars! Before she was even finished her first piece, my daughter asked if I'd make it again! I got a bit confused as to how much oil to put into the mixture, but all worked out perfectly. Thanks Nimz!

Absolutely great bruschetta. I took Nimrod Cook's advice and used jarred, roasted peppers (I always have a jar or two somewhere in the pantry). Came together in no time and they were gone in no time, too. One of those win-win recipes - tastes great and is good for you, too. A keeper.

This was fantastic! Actually, I completely left out the tomato, and used roasted red pepper in a jar diced up. It tasted soooo good!! Using the red pepper in a jar, this recipe was a snap to put together. Oh yeah, and I added chopped sweet onion for a bit of a crunch. Thank you!!
