my italian mother-in-law taught me to make this for a quick munchie.
- 2 cups chopped tomatoes
- 1⁄4 cup chopped basil
- 1⁄4 cup onion
- 1 tablespoon olive oil
- 1⁄4 teaspoon salt
- 1 loaf Italian bread, cut into 1/2 inch thick slices
- mix first 4 ingredients together.
- lightly toast 1/2 inch slices of bread.
- spoon mixture onto toast & enjoy.
This was delicious. I added a small amount (roughly 1 to 1.5 tsp) of balsamic vinegar and used a shallot for the onion. Great flavors!
I wanted to use my fresh tomatoes and herbs from my garden, so I made this with dinner tonight. I chopped my tomatoes in a chopper, and the onion flavor was too strong, so next time I will just cut it with a knife. It was yummy!
