  • Preheat oven to 400°F.
  • Place tomatoes with liquid in medium bowl.
  • Add garlic, stuffing mix and water; stir just until stuffing mix is moistened.
  • Set aside.
  • Place chicken in 13x9-inch baking dish; sprinkle with basil and cheese.
  • Top with stuffing mixture.
  • Bake 30 minutes or until chicken is cooked through.

  4. It wasn't out of this world incredible but it is excellent for what it is. A quick weeknight meal that everyone will enjoy at least on some level. I seasoned the chicken with salt, pepper and italian seasonings first. I also used tomatoes with onions and garlic.
     
  5. This is a really quick and simple recipe to make after work. I did add basil and oregano to the chicken. I also used two cups of cheese instead of one.

Tweaks

  1. I added a bit of shredded cheese on top before baking and topped it with fresh diced tomato and basil before serving for a bit of freshness!
     
  2. Easy, inexpensive, and delicious. A definite keeper! I used chicken thighs instead of breasts, italian seasoning instead of dried basil and 1 extra clove of garlic. This was enjoyed by all.
     
  3. Made this for last nights dinner served with recipe #166973 & recipe #218059. This was great, easy to prepare & yummy. I added some spinach and mushrooms as well for extra vegie content but used diced chicken thighs instead of breasts. Cooked for approx 50 mins. Will make this again for sure but maybe with a bit extra cheese next time!
