Great tasting recipe - I made it stove top in a skillet and cut it back to 2 eggs. Takes minutes - served with stuffed mushrooms. Placed on 12 grain toast - Will do again AnnMarie

Directions

  1. Combine tomatoes and basil in a 13 x 9" baking pan
  2. Form 8 wells in the tomato mixture and crack an egg into each well
  3. Bake at 350F for 25 minutes or until eggs are set
  4. Sprinkle with cheese and bake 5 minutes more
  5. serve over toasted muffin halves, sprinkle with parsley
