Brownies With Kahlua/coffee Glaze

  • Preheat oven to 325 degrees F.
  • Butter and flour a 9 by 12 inch baking pan.
  • Line bottom of pan with parchment paper; butter and flour paper.
  • Combine chocolate, butter, espresso and salt in top of double boiler over simmering water.
  • Stir until chocolate melts and mixture is smooth.
  • Cool.
  • This can also be done in the microwave on 50% power until smooth.
  • In large bowl, combine sugar, eggs and 1 teaspoon vanilla and whisk until smooth.
  • Add melted chocolate mixture and whisk until smooth.
  • Gently fold in flour, just until it disappears.
  • Fold in pecans.
  • Pour into prepared pan; smooth the top.
  • Bake until toothpick inserted into center comes out clean, about 35 minutes.
  • Cool brownies on rack 1 hour.
  • To make the glaze: Whisk Kahlua, vanilla and butter in small bowl until well blended.
  • Add powdered sugar and whisk until smooth icing forms.
  • Spread over brownies and let set at least 1 hour before cutting.

  2. Awesome brownies, very moist and rich with a nice hint of coffee flavor. The glaze, in particular, makes them pleasantly unique. Just don't ignore the part about the parchment, like I did - they're very hard to get out of even a nonstick pan sprayed with Pam. I also had to cook them around 10 - 15 minutes longer than the recipe called for, but my oven is wonky sometimes. Everyone seemed to really like them at the gathering I took them to, and they disappeared by the end of the night.
