Brown Sugar Walnut Cookies

Lightly sweet, cookie. The flavor is delicate. Goes well with a tall cold glass of milk or a piping hot cup of coffee.

UPDATE: I did add 1.5 times the amount of finely chopped walnuts and a little (maybe a tablespoon) of instant coffee granules to the dough in making this the second time, and I think that fits the bill for me! Not very strongly flavored, just nicely subtle.

These cookies had a great chewy-crispy texture. The recipe did have what appeared to be a few typos to work around: shortening was listed as an ingredient but not included in the directions, and vice versa with baking soda. I substituted lard for shortening and added it to the butter, which probably helped with the texture of the cookies. Also, I "guesstimated" that the recipe would require 1/4 teaspoon of baking soda. If you're looking for a very delicately-flavored cookie, then this is your recipe. I personally found that the recipe needed a little more punch, which wasn't even achieved when I added nutmeg. I may use 1.5 or even twice the amount of walnuts next time, or I may add instant coffee granules to give the cookie a little more spice, for my tastes. On the whole, though, I would definitely make these again!

  1. Combine flour, baking powder, soda, and salt, set aside.
  2. Beat butter, sugars and the egg till creamy. Add vanilla, Mix well.
  3. Blend in flour mixture, then stir in walnuts.
  4. Drop by teaspoon full into cookie sheet sprayed with Pam or similar cooking spray.
  5. Place dough 3 inches apart. Bake at 375° for 10 minutes or until lightly browned. Allow to stand 2 minutes before removing from cookie sheet.
