One of the many fish recipes I found one year during Lent - this one made it easy to give up meat. Very easy, but the taste is out of proportion to the effort.

  1. Combine sugar, butter, juice, soy sauce, and wine.
  2. Place the salmon fillets in a baking dish and cover with the marinade.
  3. Marinate in the refrigerator for at least 3-6 hours.
  4. Bake 15-20 minutes at 400 degrees, basting every 15 minutes.

I made this last night and it was so good! I made one change since my DD is allergic to dairy. Instead of using butter, I used sesame oil and that really makes it yummy. I served it with Dan's Asian Rice (found on and on a bed of cooked spinach. Cooked the spinach in sesame oil also with garlic and soy sauce. My kids gobbled it up! Thanks for the recipe!

I don't know what happened. The salmon had no flavor at all. I marinated it for four hours and I basted it as it was baking. I even made made more of the sauce/marinade than called for. I had to end up using a bottled teriyaki marinade to give the salmon flavor. What do you think may have happened?
