A nice breakfast "bread", and also great for a brunch.
- 1⁄2 cup oil
- 1 cup brown sugar
- 1 egg
- 2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup milk
- 1⁄2 teaspoon vanilla
- 1⁄2 cup chopped nuts (optional)
- Mix together oil, brown sugar, and egg.
- Then add flour, soda, salt, milk and vanilla.
- Put into greased muffin tins and bake at 375 for 15-20 minutes.
These were great, I added whole wheat flour and a banana that I needed to get rid of. I made large muffins, since theres only two of us I froze most of them, but will look forward to warming those up for breakfast during the work week. Thanks for posting Miss Diggy.
i sifted the flour (used whole wheat flour). i did not have vanilla instead i added one brown mashed banana and cooked for 24 minutes. it was great, my 16 month-old son and husband liked it so much. 12 muffins finished in one day!. thanks.
Very tasty and good for my sweet tooth, however I found that the mixture was very lumpy. Maybe next time I will sift the flour instead of pouring it straight in.
