Brown Sugar Bran Muffins

I adapted the recipe that ludeleh posted - Easy Cinnamon Topped Raisin Bran Muffins, to add wheat germ and ground flax seed.

Delicious muffins. I used all brown sugar which worked out well. I discovered I was out of cinnamon so I took a chance and used allspice. I also added some raisins because I used a plain bran cereal. Thanks for these healthy yummy muffins!

Ingredients Nutrition


  1. In large bowl, soak raisin bran cereal in milk for 10 minutes.
  2. Add egg, oil, and vanilla. Mix well.
  3. Add flour, wheat germ, flax seed, sugars, baking powder, and salt.
  4. Mix just until moistened. Batter will be a little lumpy.
  5. Spoon mix into 12 greased muffin tins, filling each only 1/3 full.
  6. Sprinkle filling onto each muffin tin.
  7. Spoon rest of mix into muffin tins, filling until tins are 2/3 full.
  8. Sprinkle topping over muffins.
  9. Bake at 400°F for 20 minutes, or until done.
  10. Enjoy! These freeze well.
