- Prepare the brown rice according to package directions.
- Chop 1 large onion. In medium nonstick skillet cook onion in 1 tablespoon butter until softened. Stir in rice.
I usually have cooked brown rice in the freezer ready for such a quick fix as this. The onions were cooked in Smart Balance, the defrosted rice added In and in no time I had a delicious side dish ready to put on the table. Made for *PAC Spring 2008*
