      Brown chopped onion and sliced mushrooms in a large saucepan with the olive oil, about 5 minutes.

      Add brown rice and stir to coat in oil.

      Add chicken broth.

      Bring to a boil, then simmer for about 45 minutes or until all liquid is absorbed.

      Not being a fan of brown rice, I fully expected to hate this. Normally when one wanders into any situation with that kind of attitude the outcome isn't good. This recipe is FANTASTIC---I loved it!!!! I followed the recipe adding in garlic. This recipe is so flexible; you could add just about anything and it would be great. Next time, I will add some veggies and maybe chicken and make it a meal.
      Yum, SO GOOD!

      Thank you for posting this, exactly what I was looking for. The only adjustment I made was that I used oil and butter, because I like the taste of butter nad rice.

      This dish is outstanding. The only adjustment that I made was to add a bit of chopped green onion at the end of cooking. Wow! My 10 yr old son polished off all the leftovers within 24 hours. I'd call this one a DEFINITE keeper. Thanks MPS Michigan for an easy and delicious dish!
