Lala came home with this recipe recently and I looked at her like she was nuts. I thought to myself "that is one weird combination of stuff". I was hesitant to try it, so she made it today and brought me some. WOW! Next time I won't doubt her. It was REALLY good.
- 3 cups cooked brown rice
- 8 ounces pineapple tidbits, drained
- 1 pear, chopped
- 1⁄4 cup golden raisin
- 1⁄2 cup pecans, chopped
- 1 cup vanilla yogurt
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 teaspoon poppy seed
- Mix together the rice, pineapple, pear, raisins and pecans.
- In separate small bowl, prepare dressing and mix well.
- Stir the dressing into the salad mixture and refrigerate for one hour before serving.
