Brown Rice Casserole

  • 12 cup butter
  • 1 cup rice
  • 1 (12 ounce) can beef consomme soup
  • 1 (12 ounce) can French onion soup

directions

  • Melt butter in microwavable casserole dish.
  • Add rice, consomme' beef, and french onion soups.
  • Cook in microwave for 8 minutes.
  • Stir and cook for another 8 minutes or until tender.

  1. Great rice casserole!! It is full of flavor!! I made this using white rice, as that is what I had on hand, but otherwise followed the ingredients. I melted the butter and then added the rest of the ingredients and cooked for 8 minutes in microwave. I still had quite a bit of time before grill would be heated and chicken cooked, so ended up putting it in the oven for about 25-30 minutes. It turned out perfect!! The only thing I may try next time, would be to only use 3/4 of a stick of butter for a healthier dish. Thanks for sharing and will be making again!! Made for PAC Fall 09!!
     
  2. This is a really great rice dish! I increased the recipe by upping all of the ingredient quantities by half and found that I had to cook it an extra 8 minutes. This rice has a rich, intense flavor that is probably best served with a plain baked or broiled meat. We enjoyed this dish and I will make it again - thanks for posting!

I work full-time outside the home and work full-time inside the home keeping up with husband and 3 daughters (ages 13 - 21). I love to cook but have to use recipes that take less time now that life is sooo busy! I love having those days when I don't have much else planned and can just cook and bake all day! My family and I have gone on several mission trips over the past few years, and we've been blessed for one or all of us to get to go to India, Africa, Equador, and El Salvador as well.
