Toasting the rice beforehand lends a somewhat nutty flavor to the dish
- 1 1⁄2 cups brown rice
- 3 cups vegetable broth
- 1⁄2 cup chopped celery
- 1⁄2 cup chopped onion
- 1⁄2 cup chopped carrot
- 1⁄2-1 tablespoon olive oil
- Heat olive oil, onions and celery in a saucepan large enough to hold the rice over medium heat.
- When the vegetables are tender and translucent, add the rice. Stir frequently until the rice is lightly toasted.
- Add the vegetable broth and set the heat to low. Simmer until liquid is absorbed. Approximately 30 minutes.
I have made this before and the toasting of the brown rice is what makes this. Besides giving a toasty flavor it seems to make it a lot fluffier (harder to do with brown rice). I use this technique/recipe as a base for any brown rice dish. Thanks LibraryAuLait, for posting. Roxygirl
