Brown Rice and Lentils With Bacon

This recipe is a typical lentil recipe except it does have bacon and beef broth.

  1. In a big skillet, bring the water to a boil.
  2. Add the garlic, carrot, and onion.
  3. Cook until tender.
  4. Add the cumin, coriander, brown rice, lentils, cooked bacon, and beef broth.
  5. Cover, lower heat and simmer for about 45 minutes, or until lentils are tender.
  6. Fluff with fork.
  7. Stir in cilantro.
  8. Replace the lid and let sit for 5 minutes before serving.
