Very moist and delicious! Found the original of this in a Bed and Breakfast cookbook. My family loves them.
- Combine dry ingredients (except raisins) in mixing bowl.
- Whisk together wet ingredients, and stir gently into dry. Stir in raisins.
- Spray muffin cups and fill 3/4 full with batter. Let sit for 15 minutes.
- Bake 20 minutes or until golden brown and firm. Remove to rack to cool slightly, then serve warm with a drizzle of honey.
