Brother Campbells Candied Apple Yams With a Zing

- 2 1⁄2 cups brown sugar
- 3 tablespoons cinnamon
- 3 tablespoons salted butter, cold
- 3 -4 apples, cored, peeled, and sliced thinly (I use granny smiths)
- 1 (12 ounce) package cranberries, fresh premium (I like Ocean Spray)
- 2 (15 ounce) cans yams or (15 ounce) cans sweet potatoes
- 1 (16 ounce) package miniature marshmallows
directions
- In a small bowl combine first 3 ingredients with a mixer, just until butter has been integrated but not softened too much. Divide in half, setting one half aside. In a 13"x9" pan sprinkle 1/2 Brown Sugar mixture on the bottom, place the sliced apples evenly over this, then place the cranberries over the apples. Open and drain the Yams or Sweet Potatoes, and place over the cranberries. Sprinkle the second half of the brown sugar mixture over the Yams or Sweet Potatoes. Place in the oven at 325 degrees F, and cook for about 20 - 30 minutes. Remove from oven and cover with Marshmellows. Return to oven and allow to cook until Marshmellows are melted and a light toasty brown on top, about 15 to 20 minutes. Remove from oven and allow to cool slightly for about 10 minutes before serving. Prepare your sweet tooth, cuz this is to die for.

That baby in the picture...yep that's me some eon's ago...not even gonna tell you how many. I live in the Sierra Mountains bordering a National Forest with my chickens and goats. My wonderful husband who passed on October 10,2006 was extremely ill with several terminal illnesses and is sorely missed. As you might be able to tell from my name I collect bears, ceramic and stuffed (Started with one on the Birth of my first grandchild) now have over 600 bears and no room in my house for another...not that they don't continue to find a spot in my humble home as everyone has to give me one no matter the occasion.
