This was a wonderful and surprisingly hearty meal...my husband (a total carnivore) was raving about it. I didn't have any dried tarragon for the dressing, so substituted a pinch or dried fennel instead. When plated, this looks so elegant. Will definitely be making again!
My husband LOVED this dish. ~I too really liked it- but may go a bit lighter with the lemon next time- and I am a huge lemon lover!!! The marinade was super fantastic on the salmon and it was wonderful underneath the broiler. A really nice recipe to play with. Thanks!
I made this again the other night, and it is devine. It looks beautiful on the plate, and it tastes as good as it looks! I have also made this with mahi mahi, and it was equally as good. Serve it up with some chilled white wine, and you've got a gormet meal. Thanks for sharing!
An OUTSTANDING, BEAUTIFUL AND NUTRITIOUS salad. This took a bit more work than your average salad but the results are gourmet FABULOUS! I used cilantro in both the salad and the dressing instead of parsley. I couldn't find bibb lettuce so used green curly leaf. If I make this again I will use oregano in place of the tarragon because I like it better. I would say this feeds 4 people. Made for 1-2-3 hit wonders.
This is truly scrumptious. There was no yellow squash at the farm store so I substituted it for butternut squash and the flavours still worked. I found there enough salad to feed three adults easily.
The lemon/herb combo was wonderful - just the right amount of sweet & tart! I like the simplicity of using it for a marinade & a dressing! I used baby spinach, substituted Boston lettuce (bibb not available), and omitted the avocado (poor quality at our market). I would probably decrease the quantity of veggies next time. Thanx Sharon!
we loved this. the dressing/marinade was excellent. i juiced 5 lemons and used evoo, fresh herbs, it complimented the salmon and greens so well. my dh loved this, as did our guests. i did use salmon fillet, a bit over a pound, it was wonderful. i'm only sorry i have no leftovers.
