Broiled Pineapple

"I made this up when I had half a pineapple left which was just calling my name. I love pineapple and can easily eat a whole one in one day. After lots of chunks grabbed throughout the evening, I decided to try something a little different. This recipe is so easy and quick and really great when you want something light, but a little more than just another piece of fruit for dessert."

  • Place the slices of pineapple on a cookie sheet and sprinkle with the brown sugar Sprinkle a little bit of rum over each slice, I just hold my thumb over the top of the bottle and sprinkle out a little Broil for 6 minutes.
  • Serve with vanilla ice cream.

  1. This turned out really great - I used Splenda Brown Sugar in place of the Brown Sugar and to make it a little easier mixed it all together in a ziplock bag until the pineapple was all coated. Great recipe thanks!
