This is the most delicious fish that I've ever eaten (and I've eaten many a fish)- better than in the finest restaurants. I omitted the celery salt because I didn't have any and baked instead of broiled it. I brush lemon juice on top and immediately covered the tilapia with Parmesan mixture and baked it , uncovered, at 350F degrees for 10 minutes. Then, increased heat to 425F degrees for 8 minutes to brown topping. Baking the fish with the Parmesan mixture on top the entire time made the fish more moist than adding it later- not to mention it was easier! I made enough for leftovers and warmed up the leftovers with a little water added to a small pan covered with foil in the toaster oven for 20 minutes at 375F. It was just as wonderful as the first day that I made it. Divine! Thank you, Kittencal.
- 118.29 ml grated parmesan cheese
- 59.14 ml butter, softened
- 59.16 ml mayonnaise
- 29.58 ml fresh lemon juice
- 1.23 ml garlic powder (or to taste)
- 1.23 ml dried basil
- 2.46 ml black pepper
- 0.59 ml onion powder
- 0.59 ml celery salt
- salt (I use seasoned salt)
- 907.18 g tilapia fillets

- Set oven to broiler heat.
- Grease a broiler pan, then line with foil and grease the foil slightly.
- In a small bowl mix together Parmesan cheese, butter, mayo, lemon juice and garlic.
- Add in all the remaining seasonings and salt if using; mix well and set aside.
- Arrange the fillets in a single layer on the prepared pan (you sprinkle salt on fish but it is not necessary).
- Broil a few inches from the heat for about 2-3 minutes.
- Turn the fish over and broil a couple minutes more.
- Remove from oven and cover them with the Parmesan mixture on the top side only.
- Return to oven and broil for about 2 minutes more or until the topping is browned and the fish flakes easily (do not overcook the fish!).
