- 1 bunch broccoli, cut into flowerets
- 2 slices whole wheat bread
- 3 tablespoons butter
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon fresh ground black pepper
directions
- Lightly toast the bread.
- Put the bread in a food processor or blender and chop into bread crumbs.
- Melt the butter in a small skillet.
- Add the bread crumbs and sauté over medium heat until toasted. Add the lemon zest, lemon juice, garlic, salt and pepper. Continue cooking, stirring constantly, until dry.
- Set crumb mixture aside to get to room temperature (This mixture can be made ahead.).
- Steam the broccoli.
- Top broccoli with the lemon breadcrumbs, and mix together.
- Serve.
