  • Cook bacon (I make it easy and buy the already cooked bacon in the refrigerator section) and crumble into pieces.
  • Chop up top of broccoli into bite size pieces.
  • Mix broccoli, onions, bacon and mozzarella in large bowl.
  • In separate bowl combine vinegar, sugar and mayo.
  • Pour over broccoli mixture and toss to coat.
  • Best if made a day ahead.

  1. Sounds like a dumb question, but do you use uncooked broccoli? Directions don't mention it. I'd have thought to steam it lightly and cool (or just blanch) before use.

  1. My mother-in-law taught me to make this! And boy is it good. She adds raisens,apples,and chopped walnuts to it. I know that sounds strange but it is really good!
     
  2. I served this to a friend who doesn't like any vegetables and she absolutely loved it. How can you not like something with mayonnaise and sugar poured over it? I left out the cheese and added raisins and roasted sunflower seeds. YUM.
     
  3. Very good recipe. I found a 1 lb. bag of 'broccoli slaw' in the produce section so I used that instead of the 1 to 2 heads of broccoli. This is a good 'base' recipe to which you can add many things. I added seedless purple grapes and sliced almonds.
     
  4. Everyone at my gathering adored this salad. I baked the bacon (a la Alton Brown, but not exactly because I couldn't remember how he did it), and used Deep South mayo. My mouth is watering anticipating my next batch - I plan to use *really good* bacon, great mozzarella, and homemade mayo. However, this is a recipe that holds up well to supermarket ingredients. Thank you for a great recipe, even for people who usually refuse to eat veggies!
     
  5. WOW! That was the first word out of my mouth after trying this. I reduced the mayo by about a third and replaced the sugar with Splenda with no problem. This is an excellent recipe that I will be making again - - very soon!! Thank you!

Tweaks

  1. I take out all the sugar. In New Zealand we cook with a lot less sugar generally. I have never seen a salad recipe with this much sugar in it. Its delicious without!
     
  2. hi, i make this salad, with red peanuts, red sliced onions, the broccoli, then add sugar, mayo that's it! delicious, i have tweaked this because i do not like bacon. Thanks for letting give my input!
     
  3. I like using cheddar cheese instead of mozzarella cheese. But this recipe has a lot of color, and taste really good.
     
  4. Adding a tbsp each of Dijon mustard and horseradish and water instead of the vinegar. This is also a good dressing for coleslaw. Dried cranberries instead of raisins and cubes of cheese, not grated and add chopped almonds
     
  5. I do a similar recipe but add regular and yellow raisins and sprinkle with cashews just prior to serving. I don't use cheese at all.
