Broccoli Potatoes

"This is quite a common way of doing potatoes but I thought I would send it in anyway. Sometimes I do the recipe up until the final baking step and then just pop them in the oven 25 min before serving dinner"

  • Preheat oven to 425°F.
  • Prick the scrubbed potatoes and bake for about 1 hour (Until tender).
  • Cool on a rack for about 15 min (do not turn off the oven).
  • Meanwhile steam the broccoli for 5 minutes.
  • Slice each potato in half and gently scoop out most of the flesh leaving the shells in tact.
  • In a blender or food processor, using the metal blade, combine the potato flesh, sour cream, broccoli, green onion, garlic, salt& pepper.
  • Process until smooth.
  • Spoon the potato mixture into potato shells.
  • Place on a baking sheet.
  • Bake until heated through about l5 to 20 minutes.
  • Serve immediately.

  1. These were great! I made then up on Sunday night and did everything except bake them the second time. Came in from work Monday evening and popped them in the oven and served hot with some veggies--we didn't even need any meat! I love quick easy meals like this.
     
  2. Not so common, never saw this one before although ingredients are common hadn't thought of putting together. Thanks for sharing:) Served it with Mom's Meatloaf (by Mary in NJ) It complimented the meatloaf and was a great dinner!
     
  3. Add me to the list of cook's who loved this easy recipe, Bergy!! I've made twice-stuffed taters before, but, they sure never came out like these! I whipped them up with a handbeater, and then folded in the broccoli ... OMG!! Soooo, good! They were great as "re-runs" the next night, too! They are "keepers" in this house! Thanks a bunch for sharing!
     
  4. Thank you for the inspiration. Big crowd showed up at the island cottage. This is how I adapted the recipe. 1. Boiled regular boing potatoes until tender. Split them in half and scooped some of the flesh. 2. I sautéed red onions and roasted some garlic. 3. I steamed the broccoli. In a food processor, I chopped together the onions, garlic, potatoes and broccoli. Seasoned the mixture. Not puréed. 4. Placed the potato halves in a 9 by 13 pan, squished together. Covered the potatoes with the mixture. 5. Topped the potatoes with shredded cheese and baked in a 350 degree oven until browned. Friends and family wiped it out!
     
  5. These potatoes were SO delicious! I didn't have baking potatoes so we did everything exactly the same, except we discarded the skins instead of stuffing them. Thanks for the recipe! We will definitely be having these on a regular basis!

Tweaks

  1. We loved these. I used about two+ cups steamed broccoli (leftover from the night before) so mine were VERY green. I subbed garlic salt for the garlic and salt. I also added some jack and cheddar cheddar cheese.
     
  2. This didn't work well for me. I used 5 small potatos instead of 2 large & yogurt instead of sour cream. I blended everything together until smooth. We didn't like the texture at all ... it was a bit on the soupy side and like potato "paste" as well. I think it would have worked better for me if I had done like Laudee & made mashed potatos and then folded in the other ingredients. On the good side, the flavor was very nice!

On January 10 2010 I will celebrate 9 years of Life with Zaar. I can't imagine being without it! It has become part of my daily routine. I feel very privileged to be one of the hosts on the Photo Forum. Taking photos of my culinary efforts is a full time hobby and I love it. My friends all know what to expect when they come to dinner "Are you finished taking pictures?" or "Did you get a photo of so & so?" I never let them wait too long and the food is NEVER cold! I now have over 6000 photos on Zaar - some fairly good and some definitely not so good. I am happy to say that practice does help. My roots are in Vancouver BC Canada - a very beautiful city that holds many wonderful memories for me. In 1990, I decided that for my retirement years I may want to settle in a smaller community and found a slice of heaven in the North Okanagan B.C. I love living here but every once in a while I miss the bright city lights, the Broadway shows and some of the small wonderful ethnic restaurants that Vancouver abounds in. That is easily resolved. I just take a trip to the coast, visit with friends for a weekend see a show and feast on Dim Sum or other specialty foods. I am getting a bit long in the tooth but was a very adventurous person. I have river rafted Hell's Gate on the Fraser river, been up in a glider over Hawaii (no not a Hang Glider!), gone hot air ballooning in the Napa Valley & the Fraser Valley, driven dune buggies on the dunes in Oregon, Para sailing in Mexico and tried many other adventurous, challenging, fun things. I have yet to try bungee jumping or sky diving. I may do them yet. I love to travel and experience other cultures. Mexco has been a favorite haunt. I have visited that lovely country many many times. Australia is another favorite as is England! In the past 16 months I have taken off 61 pounds and feel wonderful. I am off all medications and all systems are GO! In years I may be 79 but in spirit I am still in my forties. We are only as old as we allow ourselves to feel. Always think positive. Do something a bit challenging every day & always do something silly every day. Be a kid again! Laugh every day - it is internal jogging.
