Broccoli with cheese and egg in a pie shell

Very good flavor but filled pie crust too full and it ran over. Only blanched broccoli 2 minutes so as to kkep it bright green. Added a few carrot slivers for color and taste. Used half Velveeta and half american cheese. Checked at 45 min and it was beautiful: at fifty minutes it was a bit browner than I'd have liked but not so much as to affect its taste.
- 6 cups frozen broccoli stems
- 1 cup chopped onion
- 1 (9 inch) unbaked pie shells
- 4 eggs, beaten
- 1⁄4 teaspoon salt
- 8 slices American cheese
- 1⁄4 cup grated parmesan cheese

- Heat oven to 350'. Add broccoli and chopped onions together in pot and cook according to Broccoli directions; drain, cool slightly and coarsely chop. In prepared pie crust, layer half of the broccoli, half of the eggs, half of the salt and 4 slices of the cheese; repeat layers. Sprinkle with Parmesan cheese. Place on foil lined baking sheet. Bake at 350' for 40 to 50 minutes or until golden brown and eggs are set.
