Broccoli with cheese and egg in a pie shell

  1. Heat oven to 350'. Add broccoli and chopped onions together in pot and cook according to Broccoli directions; drain, cool slightly and coarsely chop. In prepared pie crust, layer half of the broccoli, half of the eggs, half of the salt and 4 slices of the cheese; repeat layers. Sprinkle with Parmesan cheese. Place on foil lined baking sheet. Bake at 350' for 40 to 50 minutes or until golden brown and eggs are set.

Very good flavor but filled pie crust too full and it ran over. Only blanched broccoli 2 minutes so as to kkep it bright green. Added a few carrot slivers for color and taste. Used half Velveeta and half american cheese. Checked at 45 min and it was beautiful: at fifty minutes it was a bit browner than I'd have liked but not so much as to affect its taste.
