Broccoli Pasta With Salmon

ingredients
- 400 g broccoli
- 1 pinch salt
- 350 g pasta (fussili are great)
- 100 g smoked salmon
- 2 eggs
- 6 teaspoons milk
- 1 teaspoon black pepper
directions
- Wash and clean the broccoli, cut it into small flowers and cook it in boiling saltwater for 4 minutes.
- Set aside.
- Take it out and cook the pasta in the same water until al dente.
- Set aside.
- Cut the salmon into thin slices and then into bites (never into cubes).
- Whisk the eggs and add milk, a pinch of salt and the freshly grinded black pepper.
- Put the pasta in a nice salad bowl, pour the eggs over it, add the broccoli and at last the salmon and blend.
- Serve or store in fridge for up to 24 hours.

I know it's probably just me, but I made this recipe even though I do have aversion to eating anything that includes uncooked eggs! So, I did leave out the 'sauce' part of this recipe, but had made up a dill sauce recipe & used it over the salmon & broccoli instead! We do like the salmon/broccoli combo & the dill sauce was a nice addition, we thought! [Made & reviewed while in Scandinavia with the ZWT6]

Originaly from Austria i moved to Iceland in 2002 after a life long longing for this country i felt at home at once and now it is the place where i belong. I am living with my wonderful husband in a nice, bright flat in the subburb of our capital, Reykjavik. I love to cook and eat healthy and i mainly use whole grain. I do not use any ready made mixes and i try to keep the food i cook close to the ingrediants i used.
I am an elementary school teacher but i work in a kindergarden now and i actually prefer that field.
Besides cooking and though especially baking, i like photography, knitting, swimming, long walks, all kind of sports, animals and nature among much more.
