Broccoli & Mushroom Casserole

- 1 lb frozen broccoli (Or about 2 medium bunches fresh broccoli, trimmed and chopped)
- 1 medium onion, diced
- 1 garlic clove, minced
- 1 (4 1/2 ounce) jar sliced mushrooms, drained
- 1 teaspoon Worcestershire sauce
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon red pepper flakes
- 1⁄4 teaspoon ground pepper
- 1 (10 1/2 ounce) can Healthy Request cream of celery soup
- 3 ounces fat-free cheddar cheese, shredded (3/4 cup)
- 1⁄2 cup light mayonnaise
- 1⁄2 cup fat-free mayonnaise
- 1⁄2 cup egg substitute
- 1 1⁄2 ounces French-fried onions, divided (half a small can)
directions
- Preheat oven to 350 degrees and spray casserole dish with cooking spray.
- Steam broccoli until crisp-tender, then place in prepared casserole dish when finished.
- While broccoli is steaming. Spray skillet with cooking spray. Over medium-high heat add onion and saute until translucent.
- Add garlic and saute for additional 30 seconds.
- Add the next 9 ingredients (through fat-free mayonnaise) and cook until warm and bubbly. Remove from heat and stir in egg beaters. Pour mixture over broccoli.
- Bake for 15 minutes, then add French-fried onions and bake an additional 10 minutes.

Okay, I changed the recipe a lot, but it turned out great! I used fresh broccoli and mushrooms, cream of chicken soup, and no french fried onions, just extra cheese on the top! It turned out great, a little heat but not burn your mouth off hot. I will definately make this again and try the french fried onions on the top.

Wow so yummy! I used breadcrumbs and sauteed onions on the top and fresh mushrooms and broccoli, and substituted the soup and mayo for 1/2 cup regular mayo and bechamelle. I also added a little onion and garlic powder. Definitely doing this one again. And a reminder I really should switch to ligher mayo.

We loved this. Very easy to put together. I used fresh mushrooms rather than canned and sauteed them with the onion and garlic. I didn't use canned soup but a powdered milk homemade substitute. And I used Alexia's oven-baked onion rings rather than the canned kind. Very delicious with these healthy alternatives!

<br>I have been a member of Zaar for awhile now and found that I love it! I have tried so many recipes and many new foods that I never would have without Zaar.

<br>I work full-time at a university in Wisconsin, it allows me to travel a bit and see the rest of the state, I work with a lot a great people and am really happy in my job.
<br>
<br>When I'm not working, I spend time with my hubby and 12 year old son. My son has picked up my love for cooking, a few of the things he makes are - naan bread, cookies, and quick breads, I'm so proud of him! In our family we also have two cocker spaniels, our puppy Laci (above) and Peanut, that we adore like they were our children.

<br>We live in an old farm house that we are remodeling (did the library and the kitchen so far....) on the outskirts of town. Close enough where my hubby can bike to work in the summer, but far enough away from campus that we don't have to lock down our lawn ornaments in fear of college pranks!
