Broccoli Macaroni & Cheese

"I was craving macaroni and cheese, so I combine a couple of recipes from this site and added broccoli. I prepared the ingredients while I waited for the water to boil, and this came together in about 20 minutes. I'm estimated the dry mustard and garlic powder amounts, so please taste the sauce and adjust accordingly. This does not produce a creamy sauce. Also, the high fiber pasta is not in the database, so the nutritional values will not be correct."

  • Prepare pasta according to package instructions, adding broccoli during the last 4 minutes of boiling time. Drain thoroughly. Return to pot.
  • Meanwhile, melt butter in a sauce pan over medium heat.
  • Slowly whisk in flour, reducing heat if necessary, cook for 1-2 minutes stirring constantly and eliminating clumps.
  • Slowly whisk in the evaporated milk/water. Add dry mustard and garlic powder. Cook for 3-5 minutes, stirring constantly, until it thickens to your desired consistency. The thicker it is, the drier the end product.
  • Remove from heat and whisk in the cheeses.
  • Pour cheese sauce over the broccoli and pasta and stir to combine.
  • Add salt and pepper to taste.

  1. This was good, loved the way the cheese sauce came together. Just lacking in flavor. Needed a lot more salt & pepper. Then I added hot sauce. I used cheddar and pepper jack cheese. It doesn’t not need more garlic powder as that can be over powering.

I live downtown and I love food and beer. (Mostly beer!) My husband and I recently moved back to Arkansas where we met 16 years ago. We both lost our nice cushy jobs, but have now both found employment and are learning to live a simpler life. We are owned by two cats. I can't imagine a life without pets. I love to cook and try new things and I'm thrilled to have a guinea pig, ur um, I mean husband around to try new recipes with. A couple of nights a week I make it a point to meet friends at our favorite watering hole. We enjoy sampling different kinds of beer while solving the world's problems. The establishment has a club, and members (beerknurds) are recognized and rewarded each time they complete the Ring of Honor by drinking 200 different beers. My rating system: 5 stars: Out of this world, crazy good 4 stars: Love it! Will make it again 3 stars: Not really crazy about it 2 or 1 stars: I wouldn't even bother reviewing unless I felt there was something mistaken about the recipe. I also love music and I love being introduced to new music.
