Broccoli Cornbread

This is good..I don't use cheddar cheese, I like the traditional cottage cheese and to chop the frozen broccoli, not thaw, it adds moisture..also I don't grease the pan, I melt a stick of butter till it browns in the oven, then pull it out pour cornbread mix in and put back in the oven..so yummy..oh btw use 2 boxes of jiffy cornbread!!

  1. Press broccoli between paper towels to remove excess moisture.
  2. Combine cornbread mix, eggs, onions, cheese, butter and seasonings.
  3. Stir well.
  4. Stir in broccoli.
  5. (Batter will be thick) Pour mixture into a greased 8 inch square pan.
  6. Bake 375 degrees for 25 to 30 minutes or until golden brown.
  7. Cool slightly and cut into squares.
