Broccoli-Corn-Cheese Casserole

  • Place broccoli in a vented covered dish; add water. Cook 4 minutes in microwave. Drain; set aside.
  • Preheat oven to 350 degrees. Combine cottage cheese, eggs, butter and flour in container of electric blender; process until smooth. Set aside.
  • Combine broccoli, corn, cheese,onion, salt and pepper in a large bowl. Stir in cottage cheese mixture. Spoon into a lightly greased 12-by-8-by-2-inch baking dish. Sprinkle bacon over casserole. Bake 45 minutes.

  1. Made quite a nice side and is great as it has enough vegies that you only need this with a main. A bit too eggy for me but still tasty, not popular with miss 5 year old but hubby & I both ate it up.
     
  2. This turned out differently than I expected, but still very delicious! I was not expected the texture to be so egg-y (which should have been obvious, with the ingredients listed). I thought the cottage cheese would be creamier (mine baked up with a grainy texture.) It reminded me of a Bisquick "Impossible Pie." The leftovers made a tasty breakfast, too.   3. What luck. I wanted to use fresh broccoli and cottage cheese. I halved this recipe and left out the corn. I loved this and my family loved it. Nice flavors and texture.
