Broccoli Chicken Casserole

"I went over to my sister's house for dinner one night and this is what she made. It was actually really good. It was originally supposed to be eaten alone, but she put it over rice and it was great!"

  • Preheat oven to 350°F.
  • For sauce combine soup, mayo, lemon juice and curry powder in a bowl.
  • In bottom of 13x9x2-inch baking dish layer frozen broccoli, chicken, and sauce.
  • Sprinkle with grated cheese and breadcrumbs.
  • Bake for 30 minutes.
  • Can be eaten plain or on top of rice.

  1. This was AMAZEBALLS!!! I made this for the family and throughout the dinner, you just heard yums and sounds of happiness. I'd say compliments to the chef but this recipe takes that top spot. A few things I changed only because of eating habits: I cooked the chicken in coconut oil which didn't give it a sweeter taste, but it definitely came out better than boiling it, or using typical cooking oils, used steamed broccoli because it's what I had, and added a bit of onion (not a lot) and that was it. It's SO good! I"m definitely saving this recipe for future use!
     
  2. Very tasty and creamy! It's a wonderful way to use leftover chicken. I added a little chopped onion, but otherwise stuck to the recipe. I loved the touch of curry powder. Thanx!

  4. This is GREAT!! The only thing I changed was I used fresh steamed broccili because it is what I had. I also upped the curry powder to a full teaspoon. Thanks for sharing!!!

I'm best at desserts and baking, but like to make just about anything. I especially love to entertain and cook for others. I'm not a picky eater and will try anything once. I'm always making new recipes so it's pretty rare if I make anything twice. These days cooking has me taking on a new challenge to find things that a picky 2 year old will eat and my husband and I will eat as well. It's not always easy but the successes are definitely worth the effort!</p>
