Broccoli Cheese Soup - Ww Friendly!!

"I put this soup together last night as my daughter was craving broccoli cheese soup, but as a weight watcher's lifetime member I wanted to be able to enjoy it as well. This version makes a lot of soup, 20 cups, with a super low point value of only 1.5 points per cup! My family thought it turned out great, I hope you like it too!"

  • Saute onion and carrots in butter until softened, add garlic and stir. Sprinkle 2 tablespoons of flour over sauteed veggies and let cook for a minute to get rid of the flour taste.
  • Add chicken base and water (or chicken stock) and bring to a simmer.
  • Add broccoli pieces and cook until desired tenderness. Add cubed pieces of Velveeta and stir until melted. Stir in milk.
  • Combine remaining 1/2 cup flour with enough water to make a slurrey and stir into simmering soup to thicken.
  • Salt and pepper to taste, above amounts of salt and pepper are approximate! Makes 10 2-cup servings!

  1. Really yummy! I did add a good amount of red pepper flakes for kick, a bit of season salt and a bit of old bay seasoning. I also forgot to add the flour slurry at the end ( I was having to cook from memory as my computer had just crashed) so it was not super thick, but it was still great and yhe DH RAVED about it =)
