Broccoli Cheese Soup

"Love the texture of this soup. You can puree part of it and leave the rest in chunks or puree it all. I've been looking for a good broccoli cheese soup and this fit the bill perfectly!"

  • Saute onion in PAM, set aside.
  • Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add milk.
  • Add Chicken broth, simmer for 20 minutes.
  • Add broccoli, carrots, onions. Cooker over low heat 20-25 minute (I used the pressure cooker for 10 min.).
  • Add salt and pepper. Puree in blender. Return to heat, add cheese and nutmeg.
