Nice and easy soup. Reminds me of panera's recipe. I made a few changes- using 1 qt chicken stock, 1 cup half and half, 2 cups milk, 1 lb broccoli but kept the carrot and cheese the same. I chopped the broccoli fine so I only put about 3 cups in the food processor and left the rest chunky. Thanks!
Very nice and easy! The only things I did differently was to use frozen broccoli florets and I rinsed them to defrost them and used fresh carrots and then used my mini-prep food processor to finely chop them before adding them (2 cups broccoli and 1 cup carrots after fine chopping) so I wouldn't have to "blend" the hot soup in the blender in batches. The onions I just did a fine dice by hand. I also didn't add much nutmeg, probably a 1/8 teaspoon. Really good this way! Veggies cooked very fast and probably tasted just about as good as the blender method.
Rich and delicious. Made as written, but next time I would use a touch less nutmeg.
Really good . I made once with vege broth and the other time with chick broth either way it is great. Chick version a smidge better. I will make again . I don't care for nutmeg. I do use 1-2 tsp dry mustard. This is my go to recipe for broccoli cheese soup.
This is very good soup, but also as written very rich. We loved it as written but next time I may use part low-fat cheese and substitute milk for some of the half-and-half. Thanks for posting.
This was absolutely delicious! Made it as directed. Might next time replace one cup of the half and half for milk to make it less rich....will make again, also for dinner parties. Thanks!
This is truely yummy. I was seeking recipes with broccoli to get my grand kids to eat it. They didn't eat it they devored it and my grand-daughter licked her bowl clean. Thanks for sharing
