I love broccoli cheese soup and this one was so good. The cream sauce was easy to make and took very little time. I used frozen broccoli that I thawed in the microwave instead of fresh. Liked the thickness of the soup and next time will add a little more cheese and maybe some lemon pepper.
We liked this very much. It was easy to make & put together. I put in extra broccoli & onion because that's what we like. The flavor of the sauce was really good. It was smooth & creamy & had just the right cheese flavor. Mine did not over thicken. I had trouble getting it hot enough on medium heat so once in a while I turned the heat up to med high for about 1 or 2 minutes then I would turn it back to medium. I did not have a lot of problems with burning on the bottom of the pan. Grandma M
This was a hearty chowder-like soup. My family quite enjoyed it. My thickened up almost too much (more like broccoli casserole)so I added another cup of chicken broth and it still had a thick, smooth chowder texture. We will add this to our growing list of broccoli soup, since all 4 of my children will eat it!
