Here's a somewhat lightened-up version of a favorite. Since I prefer fresh veggies, I usually make this with fresh broccoli (1 large bunch-cut in small pieces and blanched). I often add a dash of garlic powder or vegetable seasoning to the mix for added flavour. NOTE: Prep time does not include thawing time for frozen broccoli or blanching time for fresh.
- 20 ounces frozen broccoli, thawed & drained
- 1 egg
- 2 egg whites, beaten
- 3 tablespoons flour
- 12 ounces low fat cottage cheese
- 6 ounces Velveeta reduced fat cheese product, cut in chunks
- Preheat oven to 350*. Mix ingredients together and pour in a 2 quart greased baking dish (I use cooking spray). Bake for 1 hour, until bubbly.
A very nice side dish to go with our Christmas Eve steak dinner! I did feel it was lacking some basic spices, so I'd probably add some garlic or fresh ground pepper next time around.
