This is delicious. I discovered this after having a shortage of food in the house and blended up this dish. It is a keeper.
- 1⁄2 cup chopped onion
- 1⁄2 cup chopped celery
- 2 tablespoons oleo
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 (5 ounce) can evaporated milk
- 1 cup cooked rice
- 2 (10 ounce) boxes broccoli, thawed
- grated cheese
- Brown onion and celery in oleo. Blend soup with the milk. Mix with the rice and broccoli; put in casserole and bake for 30 minutes at 350 degrees. Spread with cheese.
