Broccoli Cashew Stir-Fry

ingredients
- 4.92 ml sesame oil or 4.92 ml canola oil
- 3 green onions, sliced, separate the white parts from the green parts
- 946.36 ml broccoli, chopped
- 473.18 ml mushrooms, chopped
- 236.59 ml snow peas
- 473.18 ml bok choy, chopped
- 118.29 ml cashews, chopped
- 59.14 ml water
- 14.79 ml reduced sodium soy sauce
- 4.92 ml freshly grated gingerroot
- 4.92 ml honey
- 14.79 ml cornstarch
- 4.92 ml pepper
- 2 garlic cloves, finely chopped
directions
- In a small bowl, mix together all ingredients for the sauce. Set aside.
- Heat a large fry pan or wok over medium-high heat. Add cashews and roast for 2 to 3 minutes. Stirring frequently. Careful not to burn them. Set aside with the green parts of the green onion.
- In the same pan, add the sesame oil and heat over medium-high heat. Add the white parts of the green onion, broccoli and mushrooms. Sauté for about 5 minutes or until broccoli is starting to become tender. Add a few tablespoons of water, if needed, to stop browning or burning.
- Add the snow peas and bok choy and sauté for 2 minutes.
- Add the sauce and sauté for about 3 to 5 minutes or until the sauce thickens. Remove from heat and add in the cashews and green parts of the green onion.
- Serve immediately with brown rice.

We really enjoyed this! I substituted carrots for the mushrooms, and they cooked well with the broccoli. I added chicken strips as well, a bit after the broccoli. The timing of everything was good, and the veggies did take a little longer but I left them big chunks - but the order was good. The sauce was not as flavorful as I expected, maybe a bit more soy sauce or red pepper like the other person suggested. I will say this took me about an hour start to finish - cutting veggies, etc. seems to take a while to prep, plus my cooking time was a bit longer. But overall, a great, healthy meal that we enjoyed!
