Easy Low fat side dish.

  1. Steam or cook broccoli in boiling water for just a few minutes until crisp/tender.
  2. Drain broccoli.
  3. Beat eggs in a large mixing bowl.
  4. Add broccoli, flour and cheeses to eggs and mix well.
  5. Grease large casserole dish cooking spray.
  6. Add broccoli mixture to casserole dish and bake in a preheated 350 degree oven for 30 minutes.

Loved this! I used 2 egg whites and actually forgot the flour! I used a little more cheddar than called for (what was in my bag) and some generous shakes of salt and pepper. This was a great side dish without a ton of fat. Even my picky 10 year old enjoyed it. Thanks.

This is very good. I halved the recipe with no problem and cooked it in a pie pan. I believe that next time I will sprinkle some additional cheese on the top, or maybe a bit of bread/cracker crumbs for more of a more finished taste. Also a bit of salt and pepper would jazz it up a bit. Thanks!
