I got the recipe for this tasty apple cake from a co-worker. She brought this to a luncheon that they gave me for Secretaries' Day. This is one of her family's favorite cakes. Simple and delicious!
- Cream together the eggs, sugar, applesauce and vanilla. Stir in and mix well the flour, salt, baking soda and cinnamon. Fold in the chopped apples and the walnuts.
- Spread into a lightly greased 9 x 13 pan. Bake at 325°F for one hour or until a toothpick inserted near center comes out clean.
- Optional: Serve with a dollop of whipped cream on top.
