Brie Appetizer to Travel

"I am notorious for bringing food to share everywhere I go, so this appetizer fit my criterion for easy to move, simple to assemble and good to eat. Pack the cheese in a plastic bag with a freezer pak, and the rest can go in your suitcase!! Don't forget a small plastic plate and spreader. I use the soft, nice dried fruits from the produce dept. and snip them ahead of time into small pieces. Use firm crackers that will withstand both the trip and the spreading."

  • 12 ounces brie round
  • 1 (18 ounce) container caramel apple dip
  • 7 ounces mixed dried fruit
  • 8 ounces large cashews
  • 10 ounces firm crackers

  • Cut off top rind of brie. Center cheese on a plate. Cover with caramel apple dip. Sprinkle with dried fruit, then the cashews. Surround with crackers and serve.
