Brennan's Shrimp Clemenceau

I do not know how authentic this recipe is. Adapted from Woman's Day Encyclopedia of Cookery.

  1. Combine water, bay leaves, thyme, peppers, salt and cayenne in a large pot.
  2. Bring to a boil and simmer 25 minutes.
  3. Add shrimp and simmer until they turn pink, about 5 minutes.
  4. Drain, discarding liquid.
  5. Peel and devein shrimp; set aside.
  6. Heat oil to 375°F and fry potatoes until golden-brown.
  7. Drain on paper towels.
  8. Melt butter in a large skillet.
  9. Saute mushrooms, parsley and garlic until lightly browned.
  10. Add potatoes, shrimp and peas.
  11. Toss lightly over medium heat and serve piping hot.
