  1. In large skillet, brown sausage. Drain fat. Set aside.
  2. Melt butter. Add egg and cook 3 minutes. Stir in sausage, cheese, salt and pepper. Cook until cheese is melted.
  3. Place tortillas on work surface. Spoon mixture over each tortilla. Fold in half, pressing gently to seal.
  4. Coat a skillet with cooking spray. Add tortillas and brown.
