Breakfast Sandwich for One

"This makes a very tasty meal. I like these better then the take out ones you buy from fast food places."

ingredients

  • 1 whole grain bun (I used Alvarado Bakery Sprouted buns)
  • 1 organic egg (large)
  • 29.58 ml mayonnaise (I always use Vegenaise)
  • 3 slice turkey bacon (I use Applegate Farms, it has no nitrates)
  • 1 slice vegan cheese (I use the Galaxy Nutrition brand American Veggie)
  • fresh cracked black pepper

  • Wrap the 3 slices of turkey bacon in a paper towel on a microwave safe plate and microwave for 2 minutes.
  • Spray a small non-stick pan with some oil. Cook the egg. I have a little round saute pan I use that cooks the egg in a perfect circle.
  • Warm the whole grain bun in the microwave on high for 20 seconds.
  • Once that is all done, spread the Vegenaise on the bun. Add the egg, bacon and cheese and sprinkle with the pepper.
  • This is very tasty!

He plays with the Albuquerque Philharmonic Orchestra which is wonderful because I get to see all his concerts and they are free! We are trying our best to live a Green and Sustainable lifestyle which is no easy feat in a desert. I love any cookbook that promotes good health and tasty meals. I enjoy pasta dishes and sweet vegan deserts. I have found that I am very successful in converting conventional recipes to vegan. This has allowed me to enjoy all types of foods that I other wise could not. Some day we would like to relocate to upstate New York and be closer to my family in Canada and my husbands in New York. My DH retires in 9 years, so nothing will stop us from heading home then :-)
