Breakfast Quesadillas

  • In a 12 inch skillet cook sausage until browned, no longer pink. Remove sausage from skillet; drain on paper towel. Wipe skillet clean, set aside.
  • In medium size bowl lightly beat eggs, sour cream, half and half, and taco seasoning mix with wire whisk until well blended.
  • In a 10 inch skillet melt butter over medium heat. Add egg mixture; cook 2-4 minutes, stirring frequently , until mixture is very moist. Stir in sausage, chives, cilantro, tomato and chilies. Cook 1-2 minutes longer until egg mixture is set but still moist. Remove from heat.
  • Place tortillas on work surface. Top half of each tortilla with 2-3 tablespoons egg mixture; sprinkle each with 1 tablespoons of each of the cheeses. Fold untopped half of tortilla over egg mixture.
  • Heat same 12 inch skillet over medium heat. Place 2 quesadillas in skillet; cook 30-45 seconds on each side until crisp and lightly browned. Remove from skillet; place on serving plate. Repeat with remaining quesadillas. With pizza cutter cut each quesadilla into wedges.
  • Serve quesadillas with fresh chives, taco sauce, sour cream and guacamole if desired.

  1. This was so good! My family really enjoyed it! I added more tomatoes, 2 T. wasn't enough for me =) I also used milk in place of the half and half and added a bit more than called for. I cooked the sausage the night before, which saved some time on the prep. this morning. Next time I may try to prepare the egg mixture ahead of time also and then assemble and cook the quesadillas in the AM. We thouroughly enjoyed this recipe! Thanks so much for posting! I am in a house of males that include my husband, two young boys, our dog Max, cats Harley and Hunter and a newly adopted iguana. Talk about being out numbered. We relocated to Idaho after living in Washington for about 13 years. I love the Pacific northwest but have fell in love with Idaho too. The people are wonderful and the community is rural enough to give my children the childhood I want them to enjoy. I got my passion of cooking from my step mom she is an amazing cook who can improvise any meal and have it come out wonderful. I have no idea how she does it but its what I aspire to achieve. I stumbled across recipezaar by accident a few years ago while acquainting myself with the internet and have been addicted ever since. This cooking community of people just amaze me. I have been welcomed with a warmness that is unsurpassed. Everyone has shared their recipes, knowledge, humor, the lists goes on and on...U guys are wonderful. I tell everyone I know about this website in hopes of inspiring all of the would be chefs out there to keep experimenting because its doesnt have to be complicated to be yummy. I love preparing a meal that makes my family say make this again mom its great, its a satisfaction that my day to day job does not provide. My pet peeves are lying, selfishness and judgemental people. I am raising my boys to be loving and giving young men. I hope that my love of cooking rubs off on them and that they will remember the times we have shared playing in the kitchen.
